I'm sure its whatever high quality oil supports the respective dish. My guess is olive oil mostly with coconut and grapeseed as great other options. Probably use so e canola when looking for a neutral base.

Not a buffet or your ordinary Asian restaurant. The dishes are more unique and I'd suggest you try for lunch. I hope you enjoy it as much as I do.
